Mashed Potato Cookies from World War I (1917)

  • 1-1/2 cups mashed potatoes
  • 1 cup sugar
  • 1 cup fat
  • 1-3/4 cups whole wheat flour
  • 2 tspns baking powder
  • 1 tspn cinnamon
  • 1/2 tspn cloves
  • 1/2 tspn nutmeg
  • Nuts, raisins may be added
Mix in the order given. Drop onto a greased pan, and bake in a moderate oven (about 350 degrees) about 20 minutes.

"Since Anna referred to whole wheat flour as graham flour, and alternative flours like rye and barley were being used in baking during the war, it's possible this recipe called for white flour."
