Tennessee Plum Cake (1978)

  • 2 small jars Plum baby food
  • 2 cups self-rising flour
  •  2 cups, sugar
  • 3 eggs, beaten
  • 1 cup Wesson oil
  • 1 tspn cinnamon
  • 1 teaspoon cloves
  • 2 cups nuts, chopped
  • Glaze (see below)
Mix in order given.  Grease and flour tube pan.  Bake 1 hour at 350 degrees.

Glaze
  • 1/2 stick butter
  • 1 cup powdered sugar
  • 1 tbspn lemon juice
Melt butter, then add sugar and lemon juice. Mix until smooth. Pour over hot cake.
