- 4 large sweet potatoes
- 1 cup brown sugar
- 1/2 cup New Orleans molasses
- 1 1/2 cups milk
- 1 cup butter
- 4 eggs
- grated rind of 1 lemon
- grated rind of 1/2 orange
- 1/2 tsp nutmeg
- 1/2 tsp cloves
- 1/2 tsp cinnamon
- Pinch of salt
Beat this mixture well, and pour into a well buttered pan. Bake slowly for an hour. Old Creole cooks add a dash of black pepper.
