- 1 cup hot coffee
- 3 cups sifted flour
- 2 cups brown sugar, firmly packed
- 1 cup butter
- 2 eggs
- 2 tspns cinnamon
- 2 tspns baking powder
- 1/2 tspn baking soda
- 1/2 tspn salt
- Butter icing (see below)
Sift together flour, baking powder, cinnamon, soda and salt. Cream together 1 cup of butter, brown sugar, and eggs until fluffy.
Alternately add dry ingredients, creamed mixture, and coffee, beating after each addition. Pour into greased 13 x 9-inch baking pan.
Bake in moderate oven (350 degrees) 35 minutes, or until cake tests done. Cool. Makes 12 servings.
Butter Icing
Combine 2 cups confectioners sugar, 1/3 cup butter, 1-1/2 teaspoons vanilla, dash of salt, and 2 tablespoons of milk. Blend until smooth, and ice cake.
