Mix 2 cups corn meal, 1/3 cup chopped onion, 1 tbspn flour, 1 tspn baking soda, and 1 tspn salt. Separately, blend 1 well-beaten egg with 1 1/2 cups buttermilk.
Make a well in center of dry ingredients and add liquid mixture all at one time. Mix until well blended. Form into small cakes, about one tablespoon for each.
Deep fry only as many cakes at one time as will float uncrowded one layer deep. Fry 3 to 4 minutes, until well browned. Turn cakes with tongs or a fork, as they rise to the surface--- several times during cooking.
Remove cakes with a slotted spoon. Do not pierce. Drain on absorbent paper.
Serve hot with fried fish. Makes two dozen sweethearts.
