Beef Tartare Loaf (1962)

For a New Year's Eve buffet, serves 50 when accompanied by other foods.
  • 5 pounds sirloin or other beef, trimmed and ground
  • 4 or 5 egg yolks, slightly beaten
  • 3 medium-sized onions, finely minced
  • 5 tspns salt
  • 1 tspn freshly ground pepper
  • 1/2 cup minced parsley
  • Chives
  • Capers
Mix beef with egg yolks, onions, salt, pepper, and parsley. When thoroughly blended, form in a loaf or long roll, and sprinkle with minced chives. Stud with whole capers.
