Pineapple Drop Cookies (1950)

  • 1/3 cup butter
  • 1/2 cup sugar
  • 1/4 cup crushed pineapple
  • 1 cup flour
  • 1 egg beaten
  • 1/4 tspn salt
  • 1/4 tspn baking soda
  • 2 tbspns hot water
Cream butter and sugar, and add beaten egg.  Sift flour and salt together.  Alternately beat in flour and pineapple. Then dissolve soda in hot water, and mix thoroughly into batter.

Drop small spoonfuls well apart on a greased cookie sheet, and bake at 375 degrees about 10 minutes.  While hot, remove onto a wire rack.
