Native-American Strawberry Leather (1899)

"Remove stems and leaves from 3 cups of strawberries, and halve. Add 1/4 cup sugar and 2 tablespoons water.

"Cook fruit mixture over medium heat until fruit is tender. Use just enough water to keep fruit from sticking to pan. Remove from heat. Pour fruit into blender or food processor, and process until the consistency of applesauce. 

"Place waxed paper on a large baking sheet with a rim. Pour fruit into the center of pan, and spread to within 1-inch of edges. Bake at 150 degrees (or lowest temperature) for 4 to 5 hours. Fruit should feel leathery and easily pull from paper. Cool and cut in strips. Store in airtight container."
