- 1 cup sugar
- 1/3 cup applesauce
- 1 cup carrot, grated
- 1 cup pineapple (undrained)
- 3 cups flour
- 1 tspn salt
- 1 tspn baking soda
- 3 tspns cinnamon
- 2 tspns vanilla
- 1 cup nuts (optional)
- 1/2 cup raisins (optional)
Mix all ingredients and put in 2 greased loaf pans or about 18 muffin cups (greased or lined with papers).
For loaves, bake 1 hour at 350 degrees. For muffins, bake 20 minutes.
