Glazed Mandarin Orange Cake (1987)

  • 2 cups all-purpose flour
  • 2 cups sugar
  • 2 tspns baking powder
  • 1 tspn salt
  • 2 cups mandarin orange segments
  • 2 tspns vanilla
  • 2 eggs
  • Glaze ( see below)
Heat oven to 350 degrees. Grease and flour a 13-x-9-inch pan. Combine all cake ingredients in large bowl. Beat at medium speed until well blended.

Pour into prepared pan. Bake at 350 degrees for 35 minutes.

Glaze
  • 1-1/2 cups packed brown sugar
  • 6 tbspns butter
  • 6 tbspns milk
  • 1 cup whipping cream, whipped and slightly sweetened
Combine all glaze ingredients in saucepan. Heat to boiling, then boil for 3 minutes. Poke many small holes in hot cake. Slowly pour hot glaze over cake. Serve topped with whipped cream.
