- Baked 9-inch pie shell
- 1/2 cup evaporated milk
- 1 envelope unflavored gelatin
- 1/2 cup cold water
- 4 eggs, separated
- 1/2 cup fresh lime juice
- 1 cup sugar
- 1/2 tspn salt
- 1 tspn lime rind, grated
- Green food coloring
Chill milk in freezing tray until crystals form around edges. Sprinkle gelatin over cold water. Stir in egg yolks and chilled milk. Blend well.
Add lime juice. Cook over low heat until gelatin dissolves and mixture thickens slightly. Stir in 1/2 cup sugar, salt, grated lime rind, and 7 drops of green food coloring. Chill thoroughly.
Beat egg whites. Add remaining 1/2 cup sugar. Fold gently into gelatin mixture. Turn into pie shell and garnish.
