Beer Meat Loaf (1971)

  • 2 lbs good-quality ground beef
  • 1/2 cup beer
  • 1/2 cup green pepper, minced
  • 2 tomatoes, chopped
  • 1 tbspn prepared mustard
  • 4 tbspns chopped parsley
  • 2 tbspns bread crumbs
  • 1 tbspn dehydrated onions
  • 1/2 tspn thyme
Preheat oven to 350 degrees.

Combine all the above ingredients in a bowl, and place in a buttered loaf pan.  Cover pan loosely with aluminum foil and bake for 1 hour.

Serves 4 to 6.
