- 1/2 cup shortening
- 1 cup sugar
- 2 eggs, slightly beaten
- 1 cup Libby's solid-pack pumpkin
- 2 cups sifted flour
- 2 tspns baking powder
- 1 tspn salt
- 2-1/2 tspns ground cinnamon
- 1/2 tspn ground nutmeg
- 1/4 tspn ground ginger
- 1 cup raisins
- 1 cup chopped nuts
Preheat oven to 350 degrees. Cream shortening, and gradually beat in sugar. Add eggs and pumpkin, and mix well.
Sift flour, baking powder, salt, and spices together, and add to pumpkin mixture. Mix until blended, and add raisins and nuts.
Drop in heaping teaspoons onto greased cookie sheets. Bake for 15 minutes, or until the cookies are firm to the touch.
Cook cookies on wire rack. Yields 4 dozen cookies.
