- 4 cups fresh peaches, peeled and slices
- 1 cup sugar
- 1/4 tspn almond extract
- 1-1/2 cups macaroon crumbs, approx. 30 cookies
- 1 cup whipping cream
Peel and pit peaches, cut into chunks, and mash fine with a potato masher. Stir in sugar and almond extract, and mix well. Refrigerate while preparing crust.
Place macaroon cookies between wax paper, and crush with rolling pin, or use food processor. Line bottom and sides of 9-inch pan with the crushed crumbs, saving 1/4 for topping.
Whip cream until stiff. Fold into peaches, then pour into into pan. Cover with foil and freeze. Remove from freezer 0 minutes before serving. Sprinkle remaining macaroon crumbs over top. Serves 6 to 8.
