- 1/2 cup butter, soft
- 1 tspn vanilla
- 2 whole eggs
- 2/3 cup honey
- 1/2 cup water
- 1-3/4 cups flour, unsifted
- 1 tspn baking soda
- 1/2 tspn baking powder
- 1/2 tspn salt
- 1 cup finely diced zucchini
- 1/2 cup chopped nuts or sunflower seeds
Combine butter, vanilla, eggs, and honey, and beat with a mixer. Beat in water. Add dry ingredients, and mix well.
Sitr in zucchini and nuts. Bake at 350 degrees in greased, floured 9-x-13-x-2-inch pan for 25 to 30 minutes, or until cake tests done.
Good with sweetened cream cheese or topped with fruit.
