- Unbaked 9-inch pie shell
- 1 fresh orange, medium size
- 1-1/2 cups brown sugar
- 1 cup light corn syrup
- 3 tbspns butter
- 3 eggs, well beaten
- 1-1/2 cups pecans, broken
Cut orange into quarters and remove any seeds. PUt orange quarters, peel, and pulp through a food chopper.
Combine orange with sugar and corn syrup in a saucepan. Bring to a full hard boil. Remove from heat. Cool slightly, stirring occasionally.
Add butter, and cool a little more, still stirring, about 5 minutes. Blen din eggs and pecans, mixing thoroughly. Pour into unbaked pie shell. Bake in 350 degree oven for 40 to 45 minutes, or until set.
