Libby's Savory Pumpkin Quiche with Bacon (1984)

  • 1 can (16 oz) of Libby's solid pumpkin pack
  • 1/2 lb bacon, crisply cooked, crumbled
  • 1/4 cup finely chopped onion
  • 1/4 cup finely chopped green onion
  • 2-1/2 oz sliced mushrooms, fresh or jarred
  • 2 eggs, slightly beaten
  • 1 can (12 to 13 oz) evaporated milk
  • 1/2 cup grated Parmesan cheese
  • 2 tbspns flour
  • 1 10-inch unbaked pie shell
Preheat oven to 375 degrees. Combine pumpkin, bacon, onion, green pepper, mushrooms and eggs. Mix well. 

Gradually add milk, stirring until blended. Toss cheese with flour, and fold into pumpkin mixture. Pour into pie shell.

Bake 60 minutes or until knife inserted near center comes out clean. Yields 8 to 10 servings.
