Date Cream Pumpkin Pie (1970)

  •  2 cups canned pumpkin
  • 3/4 cup sugar
  • 2 tbspns flour
  • 1/2 tspn salt
  • 1 tspn ginger
  • 1 tspn cinnamon
  • 2 eggs, beaten
  • 2 cups milk, scalded
  • 1 cup whipped cream
  • dates, cut up
  • 1 baked pie shell
Mix pumpkin and dry ingredients. Add to scalded milk in double boiler. then stir in beaten eggs.

Cook until it thickens. Cool in refrigerator. Before serving, pour mixture into baked pie shell. Dot with diced dates, then cover with whipped cream. 

This is very good if mixture is made the day before it is served. Services 6 to 8.

Texas Buttermilk Date Cake (1976)

  • 1 8-oz package dates, pitted and chopped
  • 1 tspn baking soda
  • 1 cup boiling water
  • 1/2 cup shortening
  • 1 cup sugar
  • 1 tspn vanilla
  • 1 egg
  • 1-1/2 cups sifted flour
  • 1/4 tspn salt
  • 1 cup chopped pecans
  • Buttermilk icing (see below)
Sprinkle dates with baking soda. Cover with boiling water, and let stand for 30 minutes. Cream shortening and sugar until light. Add vanilla and egg, and beat well. Sift flour and salt together. 

Add flour mixture and date mixture alternately to creamed mixture, beating after each addition. Stir in pecans. Bake at 350 degrees for 30 minutes in greased and lightly floured 9-x-13-inch baking pan. Let cook in pan.  

Buttermilk icing
  • 1/4 cup flour
  • 1/4 cup butter, melted
  • 1 cup buttermilk
  • 1 cup sugar
  • 1 cup chopped pecans
  • 1 tspn vanilla
Melt butter, then stir in flour. Slowly add buttermilk, and simmer, stirring until slightly thickened. Add sugar and continue cooking until sugar is dissolved. Stir in pecans and vanilla. Spread on cake while icing is still warm.

Date Rocks Cookies (1917)

  • 1 cup sugar
  • 1/2 cup butter and lard, mixed
  • 1/2 cup dates, cut fine
  • 1/2 cup nut meats, cut fine
  • 1-1/2 cup flour
  • 2 eggs
  • 1/2 tspn vanilla
  • 1/2 tspn baking powder
  • 1 tspn cinnamon
  • 1/2 tspn powdered cloves
  • 1/4 tspn salt
Cream the butter and lard, add the sugar, and mix well. Add the 2 eggs well beaten. 

Mix and sift thoroughly the flour, baking powder, salt, cloves, and cinnamon. Add the dates and nuts. Stir these dry ingredients into the first mixture. Add the vanilla.

Mix thoroughly and drop from the end of the spoon upon a well larded and floured baking pan.  Bake 15 minutes in a moderate oven.

Marshmallow Date Roll with Walnuts (1957)

  • 1 lb California dates, cut fine
  • 3 dozen graham crackers, rolled into fine crumbs
  • 1/2 cup cream
  • 1 lb marshmallows, cut fine
  • 1 cup crushed walnuts
Mix together dates, walnuts, graham cracker crumbs, and marshmallows.  Add cream to bind, as needed.  Form in balls.  Roll in crumbs of 6 graham crackers.  

Wrap in wax paper, and store in refrigerator to chill.  Slice thin and serve with whipped cream

Farmhouse Buttered Dates with Cashews (1970)

  • 12-oz pitted dates, fresh or package
  • 2 tbspns butter
  • 1/3 salted cashews
  • 1/2 cup, sifted confectioners sugar
Remove any stem ends from dates; set aside.

Melt butter in 8-inch heavy skillet over medium heat.  Add dates, one at a time, and cook 6 to 8 minutes, stirring  with a rubber spatula.  Remove from heat and let stand in skillet to cool until easy to handle.

Meanwhile, sort out 42 perfect cashews. Stuff each date with 1 nut (you may need more for large dates).

Drop stuffed dates, about 6 at a time, into confectioners sugar.  Shake off any excess sugar.  Continue until all dates are coated.  

Wrap individually in waxed paper, twisting ends.  Makes about 42 pieces. 

(You may also stuff dates with small or halved Brazil nuts, but be sure to heat them first with butter and a little salt.)

Oatmeal Coconut Cookies with Dates, Figs (1935)

  • 2 eggs
  • 2 cups brown sugar
  • 1 cup melted butter
  • 1 cup cocoanut
  • 1 cup chopped nuts, not fine
  • 1 cup cut-up dates or figs
  • 2 cups flour
  • 4 cups rolled oats, uncooked
  • 1 1/2 tspns baking powder
  • 1/2 tspn soda with 4 tbspns hot water
Beat eggs, and add each ingredient in order given.  Mix each item thoroughly as added.

Will be very stiff and dry.  Drop by spoonful in cookie tins, and shape. Bake in moderate oven.

(Origin - My grandmother's collection of recipes from neighbors and friends. All recipes are handwritten, typed or newspaper clippings, from the 1930s to 1950s.  My grandmother was a farmer's wife in California's Central Valley.)

Queen Elizabeth Cake (1961)

  • 1 1/2 cups sifted plain flour
  • 1 cup boiling water
  • 1 cup dates
  • 1 cup sugar
  • 1/2 cup nut meats
  • 1/4 cup butter
  • 1 tspn vanilla
  • 1 tspn soda
  • 1 tspn baking powder
  • 1 egg, beaten
  • 1/2 tspn salt
  • Brown sugar frosting (recipe below)
Put soda in boiling water and pour over dates.  Let stand while mixing batter.  Cream sugar and butter.  Add egg, then vanilla.

Sift dry ingredients together and gradually add to batter.  dd nuts, then date mixture.  Mix well.  Bake in 9 X 12 greased pan at 350 degrees.  

Frosting
  • 5 tbspns brown sugar
  • 5 tbspns light cream
  • 2 tbspns butter
  • Grated coconut or chopped nuts
Combine and boil for three minutes.  Spread on cake without beating.  Sprinkle with grated coconut or chopped nuts.

"This is said to be the cake that Queen Elizabeth makes herself in the palace kitchen.  The recipe is sold for 50 cents, and the money is used for charity."
