Louisiana Corn Meal Rolls (1967)

  • 1 1/2 cups flour
  • 3/4 cup corn meal
  • 1 tbspn sugar
  • 1 tspn salt
  • 3 tbspns baking powder
  • 1/4 tspn baking soda
  • 1 heaping tbspns shortening
  • 1 egg, well beaten
  • sweet milk to make dough

Sift the first 6 ingredients together. Chop shortening into the dry ingredients, and add beaten egg and milk to make a soft dough.

Roll on board floured with corn meal, and shape as for the Parker House rolls. Let rise 20 minutes before baking in 350 degree oven.
